| STEAK The finest Aussie beef marinated overnight in coriander, garlic, cumin, and our own chilli powder and oil. Then we grill it to perfection and cut asada style. | |
| CHICKEN The freshest locally raised chicken fillets marinated for at least 12 hours in oil, coriander, garlic, jalapeno and our chilli powder and grilled to golden perfection. | |
| BARBACOA High quality Australian beef rubbed with our special adobo of garlic, Ancho chilli powder, black pepper, cumin, cider vinegar and onions. Then we braise it until moist and “fork” tender and shred it. | |
| CARNITAS The finest naturally raised pork seasoned with imported Mexican oregano, garlic, cloves, cumin, jalapeno, bay leaves cracked black pepper and tomatoes. We sear it until crisp and brown on the outside and then braise it for hours until it’s exceptionally tender and shred it carefully. | |
